Chocolate Peppermint Muffins

Indulge your sweet tooth with these minty chocolate muffins made from good-for-you ingredients.

Total Time: 22 min.
Prep Time: 10 min.
Cooking Time: 12 min.
Yield: 12 servings, 1 muffin each
Ingredients:
1 (15-oz) can chickpeas (garbanzo beans), drained, rinsed
3 large eggs
½ cup raw honey
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
3 Tbsp. coconut oil, melted
½ tsp. pure peppermint extract
Preparation:
1. Preheat oven to 350° F.
2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
3. Place chickpeas, eggs, honey, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
4. Place batter in a medium bowl.
5. Divide batter among 12 prepared muffin cups.
6. Bake for 10 to 12 minutes, or until toothpick inserted in center comes out clean.
7. Cool completely and enjoy!

Goals for 2015

Feeling SO accomplished! I spent the afternoon organizing my business, planning everything out for the rest of the year and for January, and beginning to look at my Goals for 2015.

This is not something I've ever gone into depth with doing. I'm not really a planner.. I'm a go with the flow, spontaneous kinda girl.

But Planning & Organizing is one of my resolutions and I already feel great about it. I think this is going to be a Game Changer!

BIG things to come in 2015! I have a Vision and now I feel prepared on how I'm going to MAKE IT HAPPEN!

Apple Banana Quinoa Breakfast Cups


LOVE this SUPER easy breakfast recipe!

Apple Banana Quinoa Breakfast Cups


Yield: 12

Ingredients


½ cup applesauce
1 cup mashed banana (about 3 bananas)
1 banana for slicing
1 cup cooked quinoa (about ½ cup dry)
2 ½ cups old-fashioned oats
½ cup almond milk
¼ cup honey
1 tsp vanilla extract
1 tsp cinnamon
1 apple, peeled and chopped



Instructions

Preheat oven to 375 degrees. Lightly grease a muffin tin (I use olive oil).
Cook the quinoa. Bring ¾ up water to a boil, pour in ½ cup dry quinoa, reduce to a simmer until fluffy—about 12 minutes.
Mix applesauce, mashed banana, almond milk, honey and vanilla in a bowl.
Mix dry ingredients (quinoa, oats, cinnamon) in a separate bowl. Slowly stir the wet into the dry until fully combined.
Peel core and chop up an apple. Mix the apple chunks into the bowl.
Fill each of the muffin cups to the top with the quinoa mixture. Add a banana slice or two to the top of each.
Bake for 20-25 minutes.
Let cool for 5 minutes, then enjoy one warm!

Notes

Store in an airtight container in the fridge. Reheat leftovers in the microwave before eating. You can also add some crushed pecans or walnuts to these--experiment!



Make a batch and eat them all week for breakfast or as a post-workout snack. They’re definitely best warm, but can also be eaten cold on the go!

How To Volunteer With Solider's Angels

In honor of the Anniversary of Pearl Harbor


A handful of years back I was sitting in my cubicle hoping for a little speck of peace, but knowing I wouldn't get that as a new batch of Fraud Investigators from a training class I just taught would be hitting the floor with tons of questions. I was quickly skimming the CNN website to see what was going on in the world. 

What caught my eye was an article about the high suicide rate among Service Men and Woman who had served multiple deployments. I was so heartbroken to read some of the examples. I am an former military wife myself. I was married during Desert Storm...many moons ago, and my former hubby was attached to MiraMar Base. I worked on the base in the Civilian Personal Department during that time. My grandfather was killed in battle during WWII and is buried in Epinal, France. My father served during the Vietnam War in Korea. I have strong emotional ties to this community.




This article spoke about http://www.soldiersangels.org  Their motto is "May no Solider Go Unloved."

You register and adopt a service person that they randomly assign you. This person's name is usually submitted without their knowledge, and its by their CO, or someone that maybe notices that they don't get a lot of mail, or don't have family, or maybe that they are even struggling. 

You commit to writing three letters a week and sending two care packages a month. 




I signed right up! Pretty soon I got the news that I was assigned to Staff Sargent Josh (I'll keep his last name private) and that he had eight months left on his deployment. 

I struggled with how to introduce myself. I saw this company in the literature I received that made cakes that withstood the heat. It was pricey at $75.00 bucks..but I thought why not and how freakin fun! I imagined the look that might be on his face at getting a fancy cake in Afghanistan. I ordered the cake...then a few days laster thought holy Mcgregor I need to get a letter of introduction on the way as they said sometimes the mail takes weeks. It took me about 4 days to properly craft this letter (I was also working about 50-60 hours a week at the time) I wanted it to be upbeat, kind and caring. I sent it off.

I just about fell over when I received a reply from him 2 weeks later and I'll never forget what he said. 

He told me he got the cake a day before my letter arrived. He said he just sat there for a whole day just staring at it completely bowled over that a stranger would send him a cake. He said everyone was bugging him like crazy to bust it open and eat it. He just wouldn't let them till the second day. He was just awesome that he was so touched at that gesture so I was completely thrilled. He was very appreciative and told me about himself that he was married with 3 kids, and he was on his 3rd deployment and current serving in Afghanistan. He said that he didn't receive a lot of letters, and was looking forward to taking leave in a few months. We had a very nice and friendly correspondence and I was thrilled when he did get to go home for a visit as he and his wife renewed their wedding vows...very sweet!  We corresponded weekly for the eight months and I sent two care packages. I knew that were he was stationed was incredibly hot. I went to Costco and stocked up on tons of body wash, towelettes, those flavor packets that you can add to bottle water and some little soft nerf balls..just for fun. He said, funnily enough they enjoyed those balls and had a great day tearing up their office throwing them at each other! Ha-Ha! 

I'm glad he felt cared about and that he completed his tour and went home nice and safe to his wife and kids!  

I wholeheartedly recommend this organization! Here are some details:

Soldiers' Angels provides aid and comfort to the men and women of the United States Army, Marines, Navy, Air Force, Coast Guard, their families, and a growing veteran population.

"May No Soldier Go Unloved," encapsulates the motivation behind Soldiers' Angels. The volunteers of Soldiers' Angels work tirelessly to demonstrate active care and concern for veterans, the wounded, deployed service members and their families.


To date, our volunteers have sent hundreds of thousands of care packages and letters to "adopted" deployed service members; we have supplied the wounded with over 25,000 of our First Response Backpacks directly at the Combat Support Hospitals in Iraq and Afghanistan and the major military hospital in Germany, as well as provided care and comfort to those in stateside military and VA facilities; we have provided emergency aid to military families in need; we have partnered with the Department of Defense to provide voice-controlled/adaptive laptops to over 6,000 severely-wounded service members, as well as other technology that supports rehabilitation; we have provided flights to soldiers on leave or in emergency situations, and to their families wanting to be with them upon return from overseas; we provided Level III KEVLAR armored blankets to give personnel extra protection in their vehicles when it was needed early in the Iraq war; and we help to honor and uphold the families whose loved ones have paid the ultimate price for our freedom and safety. With the assistance of our generous supporters, the many volunteers of Soldiers' Angels have accomplished this and much, much more on behalf of the grateful citizens of the United States of America.

Mint Chocolate Truffles


Mint Chocolate Truffles


These minty truffles have so much chocolate flavor, one is all you need!


Total Time: 4 hrs. 10 min.
Prep Time: 10 min.
Cooking Time: None
Yield: 12 servings, 1 truffle each
Ingredients:
5 oz dark chocolate, 70% cocoa or higher, finely chopped
1 Tbsp. coconut oil
½ cup lite coconut milk
½ tsp. pure mint extract (or pure vanilla extract)
⅓ cup unsweetened cocoa
Preparation:
1. Place chocolate, coconut oil, and mint extract in a small bowl; mix well. Set aside.
2. Bring coconut milk to a gentle boil in small saucepan over medium heat.
3. Add coconut milk to chocolate mixture; whisk gently until combined.
4. Place chocolate mixture, covered, in refrigerator for at least 4 hours or overnight.
5. Using a melon baller or spoon, scoop out 1 Tbsp. of chocolate mixture. Roll into a ball. Roll in cocoa powder until evenly coated. Repeat steps five and six until there are twelve truffles.
6. Store in refrigerator for up to one week or in freezer for three months.

A True Addict ....Rescued

I just calculated that I used to spend at LEAST $224 a month on POISON.

Poison = Diet Coke.

Dramatic I know.

I am not PERFECT with what I eat. But I know one thing, I was addicted to Diet Coke big time.

Like many people working in a Corporate high stress job, I usually worked about 50-60 hours, 40 at work, then all the extra at home on my laptop every single evening making sure my reports were perfect.  I  went to bed late... every. single. workday.

So.... the Vending Machine became my best friend when I needed a pick-me-up, or most often when I needed to eat away my stress after taking really abusive escalated calls. I share that because I had a LIFELONG addiction to Diet Soda... it was bad.

I just calculated that I used to drink at LEAST 3-4 Diet Cokes a day - which means I was spending $56 a week - which is $224 a month... on gnarly chemicals.




CAN YOU BELIEVE THAT!!?!?!

Like every other human on Earth, I was skeptical about Shakeology at first because of the cost & because I THOUGHT it was a protein drink. I didn't know that it was so much more than that & I didn't know what I was missing out on.

Fast-forward almost THREE YEARS and I drink this incredible product every single day - sometimes twice. I save $224 a month - stopped pouring poison down my throat 3-4 times a day and have replaced it with something my body truly THRIVES off of.... and I even save AFTER I buy Shakeology.



Crazy how that works.

I was that person that never thought I would stop craving & drinking Diet Coke... but I am here to tell you I DID. That has nothing to do with will power it's what Shakeology gives my body what it NEEDS and so my body no longer craves that junk!
